Cream Cheese Sugar Cookies

Littleman has been absolutely determined that we NEED to make cookies. I guess he needed his kitchen fix right there with me, or maybe it's just his love for cookies (I'm thinking it's probably the second one, but we can pretend, right?). As picky of an eater as he is, I haven't yet found a cookie that he's opposed to, but these are pretty high on his list of favorites. These are a very soft puffy type sugar cookie (if you want a chewier texture you can skip the baking soda and baking powder that give it that rise and puff) that smell and look so inviting.

Cream Cheese Sugar Cookies:

1 cup butter (room temperature)
4 oz cream cheese (room temperature)
1 cup cane sugar
1 egg (room temperature)
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda

  • In a mixing bowl, mix together flour, salt, baking soda and baking powder. Set to the side.
  • In a separate mixing bowl, cream together butter, cream cheese, and sugar.
  • Add in egg and vanilla and mix on medium speed.
  • Add in your flour mixture in 2 steps to ensure it combines without any lumps or bumps.
  • Chill dough overnight (optional, but it is a very sticky dough unless you chill it so this step is essential if you intend to roll it out and use cookie cutters)
  • After dough has chilled, preheat your oven to 350.
  • For round cookies, roll your dough into balls (I used a generous teaspoon to measure dough for each cookie) or roll your dough out and use cookie cutters for shapes.
  • Place on an ungreased cookie sheet (yes, I did just say ungreased! I know, I usually grease everything, but these need to be able to grip a bit so that they can have that pretty puff to them).
  • Bake for about 10 minutes ( or until bottom edge is golden brown).
  • Sprinkle with sugar immediately after pulling from the oven. (or, if you prefer, wait until they cool and ice them).
