Simple No-Shortening Pie Crust

I love pie! Pumpkin pie, apple pie, cherry pie, pot pie…. I just love pie! The crust is absolutely the part that makes or breaks a pie for me. The filling can be amazing and the whole thing can be ruined by a tough, bland, uninteresting crust. A pie with a soft, buttery, perfectly flaky crust is definitely one of those foods that I just can’t seem to turn down (even if it means breaking my diet).  This recipe is my absolute favorite diet breaker homemade pie crust and is my go to for both sweet and savory pies (if you want to add a little extra punch for sweet pies, add a pinch of cinnamon). It makes one nine inch pie crust, so if the recipe calls for a double pie crust(bottom and top) make sure to double the recipe.

Simple No Shortening Pie Crust

Super simple, flaky, and delicious homemade pie crust without the need for vegetable shortening.

  1. 1 1/3 cup all-purpose flour (unbleached)
  2. 8 Tablespoons unsalted butter (cold)
  3. 1/4 teaspoon salt
  4. 4 Tablespoons water (give or take based on humidity and altitude)
  1. In large bowl, cut butter into flour (can use pastry cutter, two butter knives, or I tend to prefer to combine with my fingers until texture is crumbly)
  2. Once texture is crumbly, add water 1 Tablespoon at a time until dough sticks to itself (better to be slightly too crumbly than too wet)
  3. Form a dough ball and then roll out on floured surface.
  4. Use rolled out dough in 9-inch pie pan and bake as called for in pie recipe or store in the fridge until needed.
  1. If a recipe calls for a double crust (top and bottom), double the recipe.
