Strawberry and Coconut Cream Popsicles

Summer has only just begun and the temperatures and humidity are already wicked here in North Carolina! It feels like I can't step out my front door without becoming a glistening ball of frizz. Anything to help cool down after a long day outside with Littleman, the critters, and the garden is welcomed and getting Littleman to eat something that isn't just an artificially colored slush of corn syrup, without complaint, is always a wonderful thing. I love when it's possible to disguise something healthy as a sweet treat (especially when it's as simple as these popsicles!)!  I'm sure that all of you other picky eater mommas can feel me on that one! I am really hoping that this phase passes soon (preferably yesterday!), but in the meantime, I resort to trickery. Yes, yes I know the whole "if he's hungry enough, he'll eat what is in front of him" bit, and I am working on myself about sticking to my guns on the food issues (I'm a work in progress!). For now, trickery and sneaky health foods it is!

Strawberry and Coconut Cream Popsicle Recipe:

One can (13.5 oz) full fat coconut milk
1 pint fresh strawberries (admittedly, my pint was missing a couple along with my willpower)
2 tspn honey
1/4 tspn vanilla extract

  • Place all ingredients in a blender and blend to desired texture.
  • Pour into popsicle molds ( I got these super cute ones for ours)
  • Freeze and Enjoy! (Run some warm water over the outside of the mold for easy unmolding.)
